American Homemade Turkey Soup

Ingredients:

5 lb turkey breast.
2 onions
2  stalks of celery
1 tsp dried thyme
1/2 tsp dried rosemary
1/2 tsp dried sage
1 tsp dried basil
1/2 tsp dried marjoram
1/2 tsp dried tarragon
salt & black pepper
1/2 lb     Italian pasta
 
Cooking:

   1. Place turkey breast in a large pot. Cover with water.
   2. Peel and cut onions, wash celery stalks, slice, and add to pot.
   3. Simmer covered for about 3 hours.
   4. Remove carcass from the pot. Cool off the soup in the refrigerator and skim off fat.
   5. Remove remaining meat from turkey carcass and cut into pieces.
   6. Add turkey meat to skimmed soup along with herbs and spices.
   7. Add pasta. Continue cooking on low heat for about 20 minutes until pasta is done.
