Ingredients:
2 cups flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 tsp. almond extract
1/2 tsp. vanilla extract
1 cup shelled pistachios, chopped
1 cup drained maraschino cherries, patted dry
Melted chocolate
Method:
1. Preheat oven to 325F. Line a baking sheet with parchment paper.
2. Mix flour, baking powder and salt.
3. Beat butter with sugar until fluffy. Beat in eggs; add extracts. Beat in flour mixture. Stir in cherries and nuts.
4. Shape dough into 2 logs and place on baking sheets, 3" apart. Bake for 40 minutes.
5. Remove from oven and reduce heat to 250F. Allow logs to cool slightly.
6. Cut logs into 1/2 inch thick, diagonal slices. Transfer slices to baking sheets, standing upright.
7. Return to oven and bake for 25 minutes. Cool on rack.
8. Melt chocolate in a double boiler. Dip half of each cookie into melted chocolate and set on wax paper to cool.
