Ingredients:
- 1 tablespoon olive oil
- 6-8 minced garlic cloves
- 1 chopped onion
- 4 cups of chopped kale
- 4 cups of chicken broth
- 2 cans of white beans
- 1 can of tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- salt and pepper
- 1 cup of chopped parsley
Cooking:
- Heat the olive oil in a pot and add garlic and onion, sauté until soft.
- Add kale and sauté until wilted.
- Add the broth, beans, tomatoes, herbs, and salt and pepper.
- Let it simmer 20-25 minutes.
- Serve it in bowls and add parsley on the top.
