Key Lime Pie - American Dessert

Ingredients

    1 3/4 cups graham cracker crumbs
    4 Tbsp reduced-fat margarine
    3 eggs, separated
    1 12-oz can evaporated fat-free (skim) milk
    1 Tbsp cornstarch
    1/3 cup sugar
    1/3 cup fresh key lime juice
    3 drops green food coloring
    1/4 cup sugar

Directions

    1. Preheat the oven to 350 ° F. Combine the graham cracker crumbs and margarine in a medium bowl and cut to mix. Press into a 9-inch pie pan and bake for 7 - 10 minutes or until browned.
    2. Combine egg yolks, milk, cornstarch, and 1/3 cup sugar in a saucepan. Cook over medium heat, bringing the mixture to a boil. Remove from the heat and add the lime juice and the food coloring. Pour the mixture into the crust.
    3. Beat the egg whites with a mixer until peaks form. Add 1/4 cup sugar and beat until stiff.
    4. Spoon the meringue over the filling and bake until the edges are lightly brown, about 2 - 3 minutes.
    5. Cool before serving.
