Nepalese Alu Tareko (Potatoes Home Fries)

Ingredients:

3 big raw potatoes (peeled and sliced)
2 medium onions, sliced
1 tablespoon oil
1 tablespoon ghee
½ teaspoon fenugreek seed
4 cloves garlic, crushed
½ teaspoon turmeric powder
1 teaspoon cumin powder
1 fresh green chili, seeded and sliced lengthwise
1 teaspoon coriander powder
1 teaspoon crushed ginger
1 teaspoon cayenne pepper
salt to taste


Cooking:

1 Heat oil and ghee. Fry fenugreek seeds till they pop. Add the onions and potatoes. Fry 5 minutes.
2 Add all the remaining ingredients, cover and cook over lowest heat, stirring constantly. If necessary add a bit of water. Cover and cook until potatoes are tender.
