Nepalese Chicken Chili

Ingredients:

1 Large red onion
1 large green bell pepper
8 chili peppers
3 (roma) tomatoes
1 tsp. salt
2-3 lbs. chicken cut up
1 tsp. chili powder
1 tsp. cumin powder
3 Tbs. catsup oil
1/2 bunch of chopped cilantro

Cooking:

1 Chop in medium size pieces of red onion and green pepper and (roma) tomato.Split chilies lengthwise.
2 In separate sauté pan, sauté onions and oil for the first 5 minutes, then add green peppers and sauté for the next 5 minutes. Add cut chili peppers and sauté for 3-4 minutes.
3 In a separate pan fry chicken, salt and oil until thoroughly cooked.
4 When both Chicken and Seasoning are cooked, combine the cooked vegetables and chicken and continue to cook over medium heat for about 5 minutes. Then, add chili powder, cumin powder and catsup.
5 Cook until thickened, about 5-7 minutes. Add chopped cilantro to top of dish for garnish. Serve over rice.
Cut onion, tomatoes and green pepper in medium size. Split chilies to half by cutting it lengthwise.
