Nepalese Gajar Ko Halwa II (Carrot Pudding II)

Ingredients:

2 lb carrots (grated)
½ cup condensed milk
¾ cup Khoya (use Ricotta Cheese if Khoya is not available)
1 cup sugar

Garnish
¼ cup cashews
2 tablespoon dates


Cooking:

1 Cook carrot with half of sugar on medium heat for 15 minutes. Stir well.
2 Add the condensed milk, khoya, rest of sugar and cook again in medium-low for 15 minutes.
3 Garnish with the cashews and dates and serve.
