Nepalese Kheer (Nepali Rice Pudding)

Ingredients:

1 cup rice
1 cup half and half (alternate: use whole milk)
2 cups whole milk
1.5 cups sugar
1 teaspoon cardamom
2 tablespoon unsalted cashews

Optional
2 tablespoon cashews
½ teapoon Elachi powder
½ teapoon Saffron


Cooking:

1 Cook rice with whole milk.
2 Add half and half, sugar, cashews and spices
3 Boil for a few more minutes.
4 Serve hot.
