Boquerones are a kind of anchovy.
Ingredients:
- 1 kilo of boquerones
- 1 cup vinegar
- 1/4 cup rock salt
- slices of ginger
- 1/2 cup olive oil
- 1/4 cup parsley, finely chopped
- 1/4 cup vinegar
- 2 tbsp. garlic, finely chopped
- 1 tbsp whole black pepper corns
- hot peppers, chopped
Preparation:
1. Clean fish and marinate in the vinegar, salt and ginger mixture overnight.
2. Discard the liquid. Add all the other ingredients and add the fish last.
3. Mix well and put in bottles. Put in the refrigerator for 2 weeks or longer.
