Ingredients:
- 20 medium size shrimps
- 5 cups chicken broth
- 2 stalks fresh lemongrass, cut into 1 inch
- 4 table spoons fish sauce
- 1/3 cup sliced fresh galangal
- 1/2 cup straw mushroom
- 6-8 kaffir lime leaves, shredded
- 4 tablespoons lime juice
- 6 crushed fresh Thai chile peppers
- 2 tablespoons "prik pao" roasted chile in oil
- Fresh cilantro for garnishing
Cooking:
1. Wash and shell the shrimps and leave the tails on.
2. Bring chicken broth to a boil and add lemongrass, galangal and lime leaves.
3. Add mushrooms, fish sauce, prik pao and lime juice.
4. Add the shrimps and fresh chile peppers.
5. Turn off the heat when the shrimps turn pink.
6. Serve garnished with cilantro.
