Vietnamese Banana Coffee Bread

Ingredients : Serves 6 - 8

180 g Butter
180 g Castor sugar
2 Eggs
1 teaspoon Coffee paste
250 g Plain flour
1 teaspoon Baking powder
1 teaspoon Bicarbonate of soda
60 g Chopped walnuts
8 Ripe bananas (mashed)
2 teaspoon Lemon juice
2 tablespoons Fresh milk

Preparation:

  • Sift plain flour, baking powder and bicarbonate of soda.

  • Cream butter and castor sugar till light and fluffy.

  • Add in eggs one at a time, beating well after each addition.

  • Add in coffee paste and mix well.

  • Fold in 1/2 of sifted flour, chopped walnuts and mix well.

  • Fold in the remaining 1/2 of sifted flour and mashed banana.

  • Pour mixture into 2 line and grease 11 cm x 22 cm rectangular loaf tins.

  • Bake at 180oC till golden brown and cooked.

  • Remove, leave to cool before serving.
