Vietnamese Beef Curry

Ingredients : Serves 4-5

20 g Basil
2 cloves Garlic
2 slices Ginger
200 g Beef loin
  Some cornstarch water
  Some chili shreds
Seasoning A  
1 tablespoon each Curry powder, chili oil
   
Seasoning B  
1 tablespoon each Rice wine, dark soy sauce
   
Seasoning C  
1 teaspoon Salt
1 tablespoon Rice wine
3 tablespoons Coconut milk

Preparation:

  • Rinse the basil. Mince the garlic and ginger.

  • Slice the beef loin and marinate with Seasoning A.

  • Heat 1 cup of oil in a pan and scald the beef slices briefly. Remove and drain.

  • Leave 2 tablespoons of oil in the pan and stir fry the garlic, ginger and Seasoning B.

  • Add the carrots, stir fry until cooked.

  • Add Seasoning C, beef loin and basil and stir-fry evenly.

  • Lastly, thicken with some cornstarch water and sprinkle with chili shreds.
