Vietnamese Beef Stock

In Vietnam, people often makes a rich, spicy beef stock, using oxtails and adding star anise, cloves and other spices. For a plain beef stock, this recipe is all you need.

Ingredients : Makes 1.2 liters

1.5 kg Beef bones, shin or neck
1 Large onion, halved
2.5 cm Fresh ginger root
10 Black peppercorns
1 teaspoon Salt
3 liters Water

Preparation:

  • Put all the ingredients into a large saucepan and bring slowly to the boil, skimming when necessary.

  • Boil hard for about 5 minutes, then reduce the heat.

  • Simmer, covered, skimming occasionally, for 3 hours.

  • Strain and allow to cool.

  • Freeze what you do not need immediately.
