In Vietnam, people often makes a rich, spicy beef stock, using oxtails and adding star anise, cloves and other spices. For a plain beef stock, this recipe is all you need.
Ingredients : Makes 1.2 liters
1.5 kg Beef bones, shin or neckPreparation:
Put all the ingredients into a large saucepan and bring slowly to the boil, skimming when necessary.
Boil hard for about 5 minutes, then reduce the heat.
Simmer, covered, skimming occasionally, for 3 hours.
Strain and allow to cool.
Freeze what you do not need immediately.
