Vietnamese Beef in Coconut Milk

Ingredients : Serves 4

30 ml Vegetable oil
1 clove Garlic, crushed
225 g Topside of beef, thinly sliced
1 Small onion, thinly sliced
1/4 teaspoon Turmeric, or a pinch
1/2 Green pepper
1 cm Lemon grass, cut from the bottom,
  thinly sliced
15 ml Canned coconut milk
   
Garnishing  
1 tablespoon Peanuts, crushed
A handful Fresh coriander, chopped

Preparation:

  • Heat the oil until very hot.

  • Add the garlic.

  • When the smell is released, add everything except the coconut milk.

  • Stir fry for about 3 minutes or until the meat is cooked.

  • Add the coconut milk and stir once.

  • Serve garnished with crushed peanuts and chopped coriander.
