Vietnamese Black Beans Chicken

Black beans chicken with chilies and green peppers is a rich and tasty meal distinguished by the unique taste of black beans.

Ingredients : Serves 4 - 6

80 g Shallots, finely chopped
2 teaspoon Rice wine or dry sherry
1 clove Garlic, finely chopped
2 tablespoons Fermented, salted soy beans
500 ml Peanut oil
1 Small piece of dried orange peel
2 Fresh red chilies
3 Green peppers
1 kg Chicken
   
Seasonings  
2 teaspoon Chicken stock
1 tablespoon Corn Flour (blended with 3 tablespoon water)
2 teaspoon Dark soy sauce
1 teaspoon Sugar
1 teaspoon Salt
1 teaspoon Monosodium glutamate (optional)

Preparation:

  • Chop the chicken through the bones into large, bite-sized pieces. Roll in the meat with corn flour.

  • Cut the peppers and chilies into slices and soak dried orange peel before shredding it.

  • Heat the wok until it is very hot. Pour in peanut oil and fry the chicken until it turns brown.

  • Heat the clay pot and pour 2 tablespoons peanut oil into it.

  • Add the chilies, peppers, fermented beans, chopped garlic and shallots to saut�, stirring them together until fragrant.

  • Add the chicken pieces and sprinkle with rice wine. Saut� for a further 30 seconds.

  • Blend the seasoning and add to the pot.

  • Stir and cover the clay pot to cook for 1 minutes over a high heat.

  • Keep the clay pot covered until ready to serve.
