Ingredients : Serves 6-8
1.5 kg Chicken, cleanedPreparation:
Rub chicken inside out with marinade ingredients. Stuff it with leek and ginger.
Place chicken in a steamer. Steam for 15 minutes over high heat. Remove chicken and retain 200 ml of its liquid.
Put seasoning ingredients together with retained liquid in a deep pan. Bring to boil.
Lower heat and put in the chicken. Turn chicken constantly till it is evenly dark brown in color.
Remove chicken and allow to cool a little before cutting into bite-sized pieces. Arrange on a serving plate.
Heat sauce in pan. Discard spices and pour over the chicken.
Garnish with coriander (cilantro) leaves and tomato slices.
Serve hot.
