Vietnamese Braised Soy Sauce Chicken

Ingredients : Serves 6-8

1.5 kg Chicken, cleaned
1 inch Ginger, crushed
1 stalk Leek, cut into two and crushed
   
Garnishing :  
1 sprig Coriander (cilantro) leaves
1 Tomato slice
   
Marinade :  
3 tablespoons Cooking wine
1/4 teaspoon Ground peppercorn
1/2 tablespoon Salt
   
Seasoning :  
8 tablespoons Soy sauce
2 teaspoons Dark soy sauce
1 tablespoon Sugar
1 tablespoon Sesame oil
1 Star anise
1 inch Cinnamon bark

Preparation:

  • Rub chicken inside out with marinade ingredients. Stuff it with leek and ginger.

  • Place chicken in a steamer. Steam for 15 minutes over high heat. Remove chicken and retain 200 ml of its liquid.

  • Put seasoning ingredients together with retained liquid in a deep pan. Bring to boil.

  • Lower heat and put in the chicken. Turn chicken constantly till it is evenly dark brown in color.

  • Remove chicken and allow to cool a little before cutting into bite-sized pieces. Arrange on a serving plate.

  • Heat sauce in pan. Discard spices and pour over the chicken.

  • Garnish with coriander (cilantro) leaves and tomato slices.

  • Serve hot.
