Vietnamese Fragrant Chicken Wings

Chicken wings are a perennial favorite with young and old. This dish can be eaten as a starter or as part of a main meal served with rice.

Ingredients : Serves 4-6

1 kg Chicken wings
1-2 tablespoons Oil, for brushing
   
Marinade :  
2 stalks Lemon grass
2 Shallots
2 Red Chilies
2-3 cloves Garlic
2 slices Galangal root
1 tablespoon Oil
1/4 teaspoon Turmeric powder
1 tablespoon Sugar
1 teaspoon Salt
2 tablespoons Fish sauce, nuoc cham

Preparation:

  • To prepare the Marinade, cut off the thick bottom one-third of the lemon grass stalk and discard the rest. Remove the dried outer layers of the stalk.

  • Grind the lemon grass, shallots, chilies, garlic and galangal in a blender or food processor until fine, adding some oil to keep the paste moist.

  • Transfer to a bowl and stir in the rest of the ingredients.

  • Add the chicken wings the Marinade, mixing well with your hand to ensure the wings are evenly coated.

  • Cover and marinate for at least 2 hours or refrigerate overnight if preferred.

  • Brush the grilling pan of a broiler, toaster oven or table-top grill with oil.

  • Grill the chicken wings over moderate heat for about 10 minutes on each side, until golden brown and crisp. Brush with oil when necessary.

  • When the wings are cooked, drain the excess oil on paper towels and serve warm.
