Vietnamese Fried Fish with Lemon Grass and Chili

Ingredients : Serves 4

2 stalks Lemon grass, bulbous portions only, thinly sliced then minced
3 cloves Garlic, peeled and finely chopped
2 Red chilies, finely chopped
2 tablespoons Fish sauce
1/2 teaspoon Sugar
1/2 teaspoon Ground turmeric
500 g White fish fillet or red snapper
2 tablespoons Cooking oil, for deep frying
Fish sauce, dipping sauce

Preparation:

  • Combine lemon grass, garlic, chilies, fish sauce, sugar and ground turmeric.

  • Coat fish with mixture and leave to marinate for 15 minutes.

  • Heat cooking oil and deep fry fish on one side until golden brown before turning over to cook the other side.

  • Remove and drain well. Serve with steamed rice and a dipping sauce of fish sauce and chopped chili.
