Vietnamese Ladies' Fingers Salad (Okra)

Ingredients : Serves 4

30 pieces Fresh ladies' fingers (okra), washed and drained
2 sprigs Fresh basil or Chinese celery leaf, for garnishing
   
Dressing  
6 cloves Garlic, finely minced
2 slices Ginger, finely minced
1/2 teaspoon Salt
1 teaspoon Sugar
2 teaspoons Vinegar
1 teaspoon Soy sauce
2 tablespoons Sesame oil

Preparation:

  • To make the dressing, place all ingredients, except the sesame oil, in a small bowl.

  • Slowly dribble in the sesame oil while beating continuously with a whisk or a fork until the dressing is well blended.

  • Bring a large pot of water to a full boil, then add the ladies' fingers.

  • Return to the boil, cover and lower heat to medium, and simmer for 3 to 4 minutes, until the ladies' fingers become shiny dark green.

  • Remove form water and drain well in a colander.

  • Arrange the cooked ladies' fingers on a serving platter, then slowly pour the dressing evenly over them, add garnish if desired, adn serve.
