Vietnamese Pan-Fried Chicken

This aromatic pan-fried chicken is most suitable to serve with rice.

Ingredients : Serves 4-5

6 Chicken drumsticks
10 Shallots, flatten
3 Pips garlic, flatten
3 sprigs Curry leaves
1 1/2 tablespoons Turmeric powder
1 1/2 teaspoons Curry powder
2 tablespoons Ginger juice
1 tablespoon Salt or to taste
6 Lemon grass, bruised
2 cups Oil for deep frying

Preparation:

  • Clean and cut drumsticks into small pieces

  • Mix shallots, garlic, curry leaves, turmeric powder, curry powder, ginger juice and salt in a mixing bowl.

  • Add chicken pieces and rub thoroughly.

  • Add the lemon grass and mix well.

  • Season for at least 4-5 hours or overnight in the refrigerator.

  • Heat up the oil and pan-fry chicken pieces on medium heat till cooked and lightly brown.

  • Dish and drain. Serve hot with rice.
