Vietnamese Seafood Skewers

Ingredients : Serves 6

1 Medium onion, cut into 12 pieces
1 Red or green pepper, cut into 12 cubes
115 Dry white wine or sherry
1 tablespoon Chopped dill
1 tablespoon Chopped Thai holy basil leaves
1 tablespoon Lime juice or vinegar
1/4 teaspoon Salt
1/4 teaspoon Ground black pepper
12 Scallops
12 Large raw shrimps, peeled
225 Firm white fish fillet, such as cod, halibut, or monkfish, cut into 12 cubes

Preparation:

  • In a bowl, mix scallops, shrimps, fish, onion and pepper with wine, dill, basil, lime juice or vinegar, salt and pepper.

  • Leave to marinate in a cool place for at least 2-3 hours.

  • Meanwhile, soak 6 bamboo skewers in hot water for 25-30 minutes and prepare barbecue or preheat grill. Thread seafood and vegetables alternately on to skewers so that each skewer has 2 pieces of each ingredient.

  • Brush each skewer with a little oil and cook on barbecue or under the hot grill for 5-6 minutes, turning frequently.

  • Serve hot with fish sauce as a dip.
