Vietnamese Silk Squash Stir-Fried with Garlic

Ingredients : Serves 4

500 g Mud fish or any fish fillet, cleaned
1 tablespoon Fish sauce
1 teaspoon Sugar
1 teaspoon Caramel syrup
1 teaspoon Chicken seasoning powder
1/4 teaspoon Ground white pepper
1 Spring onion (scallion), white portion only, chopped
1 Red chili, chopped
1 teaspoon Cooking oil
4 tablespoons Water
   
Garnishing  
1 sprig Spring onion (scallions)

Preparation:

  • Cut fish into 100 g steaks. Marinate with fish sauce, sugar, caramel syrup, chicken seasoning powder and pepper for 15 minutes.

  • Mash spring onion and chili together using a mortar and pestle.

  • Heat oil and stir fry mashed spring onion and chili mixture until fragrant.

  • Add fish and cook each side for 5 minutes.

  • Add water and simmer until sauce is thick and coats fish.

  • Garnish with spring onion and sprinkle with pepper as desired.

  • Serve with steamed rice.
