Vietnamese Sweet and Sour Cabbage

Ingredients : Serves 4-6

2 lbs Round cabbage or Chinese cabbage
6 Dried hot red pepper
1/2 tablespoon Brown peppercorns
3 tablespoons Soy sauce
2 tablespoons Brown vinegar
2 tablespoons Sugar
2 teaspoon Salt
1/2 tablespoon Sesame oil
5 tablespoons Oil

Preparation:

  • Carefully remove clean-tear cabbage leaves into small pieces about 2 inches long and 1 1/2 inches wide. Cut spine of leaf into smaller pieces.

  • Wipe clean and cut dry hot red peppers into 1 inch long strips, remove seeds.

  • Heat oil in frying pan, fry red pepper first, and when the pepper gets dark in color, add peppercorns and cabbage. Stir quickly over very high heat for 3 minutes.

  • When cabbage is soft, add salt, sugar and soy sauce. Stir for one more minute.

  • Add vinegar and sesame oil.

  • Stir thoroughly until well mixed.

  • Serve on a platter.
